Each vintage is a delicious dare, a lesson in surrender, a celebration of the raw, uninhibited joy of turning grapes into something truly intoxicating. And because sharing is next to godliness (or at least, a damn good time), we fling open the cellar doors and invite you to join the bacchanal.

Forget the clock, we're on a perpetual playground, a daily festival of fermentation, a celebration of the sheer, unadulterated absurdity of turning grapes into liquid giggles.

We're not about mass production, we're about crafting liquid symphonies, pushing flavor boundaries like a conductor leading a cosmic orchestra. Responsibly, because even conductors need to keep the rhythm of the universe in check.

At our core, we believe cultivating curiosity elevates life's flavors. It is the compass that guides us to the heart of joy, and we're always ready to question the status quo with a wink and a grin, while relishing the chance to dance with the delightful chaos of 'what ifs.' Our winery? It's a laboratory of the soul, powered by 'what if we bottled a dream?' and 'what if terroir could tell stories?'"

Copious, my fellow stargazers, is a liquid bridge between the ordinary and the extraordinary, a celebration of the tangible and the transcendental. We're crafting wines that taste like a symphony of sunbeams and earth-kissed magic, in a space where everyone, from the grape-stained artisan to the wine-worshipping mystic, feels like they've found their home. We embrace the seekers, the sharers, the ones who know that people are the constellations, the guiding lights of our journey.

Why Copious?

My winemaking saga began, as many good stories do, with a dash of absurdity and a whole lot of love. In 2013 my dad, a retired scientist with a twinkle in his eye and a penchant for Cabernet Sauvignon, decided to turn his workshop into a winery. We made wine that tasted like adventure, sometimes successful, sometimes... well, let's just say it was an acquired taste. But the real magic wasn’t in the bottles, it was in the shared moments, the laughter, the curiosity, the sheer, unadulterated joy of creation. Then, in November of 2018, everything changed. My dad passed away unexpectedly, and my world tilted on its axis, and I found myself staring at a Carmenere, realizing I wasn’t a winemaker at all, just a guy clinging to the ghost of shared laughter. 

But here’s the kicker: my dad, bless his meticulously organized soul, left behind a treasure trove of notes, a wine-soaked diary of our adventures, a cheat sheet to the universe of fermentation. Those notes, my friends, were my Rosetta Stone, my guide to turning grief into (fancy) grape juice, my key to unlocking the secrets of the vine. Copious, you see, is a winery born from those notes, a testament to the transformative power of love, loss, and a son’s stubborn refusal to let the story end.

What's next? 

We are driven by a passion, yes, but also by a deep-seated belief that winemaking is an act of remembrance, a way of preserving the fleeting beauty of a season, a place, a moment. We seek to craft wines that are not merely delicious, but evocative, wines that strike a balance as delicate as a half-remembered melody.

Our Wine club is our life blood

Right, so, this wine club. It's how we keep doing that thing we do with the grapes, you know, the one that results in those... wines. At its core, is an act of shared artistry, a quiet exchange between maker and drinker. It allows us to offer you, our most devoted patrons, a glimpse into the intimate workings of our craft, the behind-the-scenes moments of inspiration and perspiration. Your participation in the wine club has a direct impact on our ability to thrive, helping us pursue our passion and keep this dream alive.

  • Forget Chardonnay's polite afternoon tea. This Viognier is its edgy cousin, the one who shows up with a leather jacket and a motorcycle. Same creamy vibes and complex depths, but with a floral twist that'll make your taste buds do a double-take.

  • Pan-seared scallops with vibrant spring asparagus and peas, drizzled with a bright lemon-butter sauce, create a fresh and flavorful counterpoint to the richness of our full-bodied Viognier.

  • This Grenache Rosé knows what it's doing. Pale salmon? It's a classic. Crisp and dry? It's got standards. Red berries and citrus? It's got taste. Just chill it and let it work its magic. It's got this.

  • Watermelon feta salad + this rosé = perfect summer snack. Sweet, salty, refreshing – it's all there.

  • Ripe peach, honeysuckle sweetness, and a delicate hint of almond blossom sneak up on you, followed by a refreshing acidity that's like a palate cleanser in disguise. The finish? Let's just say it's a satisfyingly long dad joke that lingers.

  • This MRV and butternut squash risotto are a total power couple. The creamy texture and sweet earthiness of the risotto are a dream with the wine's richness, and the sage adds a fresh herbaceous note that brings out the wine's floral vibes.
